Download PDFTo make the simple syrup, boil the water and stir in the sugar until completely dissolved. Cool completely and store in an airtight container.
Cube the watermelon.
To make the slushies, add the cubes to a blender and blitz until smooth. Strain through a fine mesh sieve and pour into ice cube trays.
Freeze for 4 hours or overnight.
Combine the frozen watermelon cubes, simple syrup, half the mint leaves and lime juice in a blender and blitz until combined but not smooth.
Divide between 4 glasses and top with the remaining mint leaves.
