Watermelon mint slushies

- To make the simple syrup, boil the water and stir in the sugar until completely dissolved. Cool completely and store in an airtight container.
- Cube the watermelon.
- To make the slushies, add the cubes to a blender and blitz until smooth. Strain through a fine mesh sieve and pour into ice cube trays.
- Freeze for 4 hours or overnight.
- Combine the frozen watermelon cubes, simple syrup, half the mint leaves and lime juice in a blender and blitz until combined but not smooth.
- Divide between 4 glasses and top with the remaining mint leaves.
