In a medium-sized bowl, combine half the olive oil, garlic, sliced chicken and the fajita seasoning. Toss to combine.
Heat the remaining oil in a large non-stick pan over a medium heat.
The spiced chicken and sauté for 15 minutes or until charred and cooked through. Add the peppers and cook for 5 minutes or until warmed through.
Chop the spring onions. Quarter the lime.
Serve the fajitas with the chopped spring onions, lime wedges, crème fraîche, roughly torn coriander, and corn tortillas.
