Download PDFRub the spice mix all over the brisket and allow to marinate overnight.
Remove from the fridge one hour before to ensure even cooking.
Preheat the oven to 150°C, gas mark 2. Place the garlic, onion, bay leaves, thyme, sugar, water, liquid smoke and vinegar in a large roasting pan or oven proof pot. Place the brisket on top. It should be submerged halfway.
Cover with the pot lid or foil and roast for 3 hours then remove the foil and roast for another hour. Brush the barbecue sauce over the brisket and continue roasting until sticky and caramelised.
Allow to rest for 15 minutes before shredding or slicing. You can assemble sliders with mustard and coleslaw.
