Sweet 'n smoky BBQ beef brisket

- Rub the spice mix all over the brisket and allow to marinate overnight.
- Remove from the fridge one hour before to ensure even cooking.
- Preheat the oven to 150°C, gas mark 2. Place the garlic, onion, bay leaves, thyme, sugar, water, liquid smoke and vinegar in a large roasting pan or oven proof pot. Place the brisket on top. It should be submerged halfway.
- Cover with the pot lid or foil and roast for 3 hours then remove the foil and roast for another hour. Brush the barbecue sauce over the brisket and continue roasting until sticky and caramelised.
- Allow to rest for 15 minutes before shredding or slicing. You can assemble sliders with mustard and coleslaw.
