Download PDFTo make the dressing, combine the olive oil, lime juice, peanut butter and vinegar in a small bowl. Season with the salt, pepper and chilli powder. Mix together well. Dilute with water, if necessary.
To make the salad, finely chop the tomatoes, red onion, green onion stem and parsley. Place the tomato, onions and parsley in a medium bowl and pour the salad dressing over. Toss everything together. Adjust the seasoning if necessary.
Serve immediately, or chill and serve later.
