Download PDFPreheat the oven to 200°C, gas mark 6.
Peel and halve the onion – finely chop one half and thinly slice the other. Place the onion on a lined baking tray, drizzle with the oil and roast until completely charred, approx. 10 minutes. Remove from the oven and cool.
Place the onion in a blender and blitz until fine. Set aside.
Place the porcini in a blender and blitz until fine. Set aside. Pick the thyme leaves and finely chop.
Place the butter in the bowl of a stand mixer fitted with a paddle attachment. Add the porcini, half the charred onion and thyme and combine.
Spoon the butter into ramekins, or dish of choice, and top with the remaining charred onion. Refrigerate until needed.
