Porcini and charred onion butter

- Preheat the oven to 200°C, gas mark 6.
- Peel and halve the onion – finely chop one half and thinly slice the other. Place the onion on a lined baking tray, drizzle with the oil and roast until completely charred, approx. 10 minutes. Remove from the oven and cool.
- Place the onion in a blender and blitz until fine. Set aside.
- Place the porcini in a blender and blitz until fine. Set aside. Pick the thyme leaves and finely chop.
- Place the butter in the bowl of a stand mixer fitted with a paddle attachment. Add the porcini, half the charred onion and thyme and combine.
- Spoon the butter into ramekins, or dish of choice, and top with the remaining charred onion. Refrigerate until needed.
