In a medium bowl, combine the flour, cinnamon and baking powder. In a separate large bowl, whisk olive oil and coconut sugar.
Add the flour mixture to the oil mixture and mix until combined. To this, add the almond milk, the vanilla essence and mix again.
Dice the apple, keeping 2 tbsp aside, and add it to the batter along with the raisins and pecans. Fold to combine. Pour the batter into a greased loaf pan. Top with the reserved diced apple and pecans and press lightly into the batter.
Place the pan in the oven and bake for 40 minutes until golden brown or a toothpick inserted in the middle comes out clean. Allow the loaf to rest in the pan for 5 minutes before inverting onto a cooling rack.
