Pink lady apple vegan loaf

- Preheat the oven to 180⁰C, gas mark 4.
- In a medium bowl, combine the flour, cinnamon and baking powder. In a separate large bowl, whisk olive oil and coconut sugar.
- Add the flour mixture to the oil mixture and mix until combined. To this, add the almond milk, the vanilla essence and mix again.
- Dice the apple, keeping 2 tbsp aside, and add it to the batter along with the raisins and pecans. Fold to combine. Pour the batter into a greased loaf pan. Top with the reserved diced apple and pecans and press lightly into the batter.
- Place the pan in the oven and bake for 40 minutes until golden brown or a toothpick inserted in the middle comes out clean. Allow the loaf to rest in the pan for 5 minutes before inverting onto a cooling rack.
