Wash the capsicums and pat them dry. Quarter and deseed the capsicums.
Crush the garlic and place in a small bowl along with the olive oil, vinegar, paprika, oregano and salt.
Arrange the capsicum quarters on a baking tray and generously brush with the marinade. Place the tray in the oven. Grill the capsicums until charred and blistered, approx. 10-15 minutes. Arrange the grilled capsicums on a serving platter and drizzle with the remaining marinade.
Chop the fresh herbs.
Serve the pimientos asados warm, or at room temperature as an appetiser or side dish, along with crusty bread.
