Pimientos asados

- Preheat the oven to grill.
- Wash the capsicums and pat them dry. Quarter and deseed the capsicums.
- Crush the garlic and place in a small bowl along with the olive oil, vinegar, paprika, oregano and salt.
- Arrange the capsicum quarters on a baking tray and generously brush with the marinade. Place the tray in the oven. Grill the capsicums until charred and blistered, approx. 10-15 minutes. Arrange the grilled capsicums on a serving platter and drizzle with the remaining marinade.
- Chop the fresh herbs.
- Serve the pimientos asados warm, or at room temperature as an appetiser or side dish, along with crusty bread.
