Download PDFPeel and slice the pineapples into 1cm thick rounds. Remove the core of each slice using a small round cutter.
Add the remaining ingredients to a small saucepan and bring to a gentle boil. Lower the heat to a simmer for 5 minutes, stirring until the sugar has dissolved.
Place the pineapple slices in sterilised jars and pour the pickling liquid over.
Seal the jars and refrigerate overnight before consuming. Store for up to 2 weeks in the fridge.
