Download PDFRemove the core of the whole white cabbage using a sharp knife at an angle. Place the cabbage cored side up in a large microwave safe bowl and add 1 tbsp water to the bottom. Cover and microwave on high for 20-30 minutes or until the cabbage is tender.
Preheat the oven to 200°C, gas mark 6.
Cut about 1cm off the cored side of the cabbage to reveal the layers and open it up gently using your fingers.
Sprinkle in the pitted and chopped dates, date syrup, butter and seasoning.
Roast for 20 minutes then add the walnuts and roast for another 15 minutes.
Serve the cabbage sprinkled with the mint.
