Minty date roasted cabbage with walnuts

- Remove the core of the whole white cabbage using a sharp knife at an angle. Place the cabbage cored side up in a large microwave safe bowl and add 1 tbsp water to the bottom. Cover and microwave on high for 20-30 minutes or until the cabbage is tender.
- Preheat the oven to 200°C, gas mark 6.
- Cut about 1cm off the cored side of the cabbage to reveal the layers and open it up gently using your fingers.
- Sprinkle in the pitted and chopped dates, date syrup, butter and seasoning.
- Roast for 20 minutes then add the walnuts and roast for another 15 minutes.
- Serve the cabbage sprinkled with the mint.
