Download PDFPreheat a grill or grill pan to a medium-high heat.
Slice the watermelon into 2cm cubes. Peel and chop the red onion into 1⁄8 wedges.
Place the watermelon cubes and red onion wedges on the grill and grill until char lines form – the watermelon will cook faster than the onion.
In a small bowl, whisk together the olive oil, honey, cumin and mayonnaise. Juice one lime and add it to the mixture, stirring well to combine.
Thread the watermelon cubes, red onion wedges and prawns onto wooden skewers, alternating between each ingredient.
Serve the skewers hot with the dressing and lime wedges on the side.
