Grilled watermelon and prawn skewers

- Preheat a grill or grill pan to a medium-high heat.
- Slice the watermelon into 2cm cubes. Peel and chop the red onion into 1⁄8 wedges.
- Place the watermelon cubes and red onion wedges on the grill and grill until char lines form – the watermelon will cook faster than the onion.
- In a small bowl, whisk together the olive oil, honey, cumin and mayonnaise. Juice one lime and add it to the mixture, stirring well to combine.
- Thread the watermelon cubes, red onion wedges and prawns onto wooden skewers, alternating between each ingredient.
- Serve the skewers hot with the dressing and lime wedges on the side.
