Download PDFIn a large bowl, mix the flour, fine sea salt, and yeast together. Make a well in the centre of the dry ingredients and add the water and oil. Stir together until it forms a shaggy mass.
Turn the dough onto a clean, lightly floured surface and knead until soft and smooth, approx. 6-8 minutes. If the dough still feels sticky, sprinkle over some extra flour.
Transfer the dough to a lightly oiled bowl and cover with a clean tea towel. Set aside to proof for 1 hour, until almost doubled in volume. Preheat a griddle pan.
Lightly oil your hands then divide the dough into 4 even-sized pieces then spread them out slightly. Brush with some olive oil on both sides.
Mince the garlic and spread it evenly over one side of each piece.
Place the pieces on the heated pan and cook for 3-4 minutes before flipping onto the other side for a further 3-4 minutes.
Brush with some more olive oil, sprinkle with salt flakes and chopped herbs.
