Grilled flatbreads
Middle Eastern 10 Mins Prep
- In a large bowl, mix the flour, fine sea salt, and yeast together. Make a well in the centre of the dry ingredients and add the water and oil. Stir together until it forms a shaggy mass.
- Turn the dough onto a clean, lightly floured surface and knead until soft and smooth, approx. 6-8 minutes. If the dough still feels sticky, sprinkle over some extra flour.
- Transfer the dough to a lightly oiled bowl and cover with a clean tea towel. Set aside to proof for 1 hour, until almost doubled in volume. Preheat a griddle pan.
- Lightly oil your hands then divide the dough into 4 even-sized pieces then spread them out slightly. Brush with some olive oil on both sides.
- Mince the garlic and spread it evenly over one side of each piece.
- Place the pieces on the heated pan and cook for 3-4 minutes before flipping onto the other side for a further 3-4 minutes.
- Brush with some more olive oil, sprinkle with salt flakes and chopped herbs.
