Download PDFTo make the dressing, combine all the ingredients in a food processor or blender and pulse for 1 minute.
Adjust the seasoning then cover and refrigerate until needed.
To make the rice paper rolls, pick the lettuce leaves and trim if necessary.
Slice the cucumbers into matchsticks.
Thinly slice the mangetout.
Dip 1 rice paper roll in lukewarm water for 30 seconds or until clear and soft.
Remove from the water and place on a clean damp tea towel.
Arrange the lettuce leaves, cucumber and mangetout on one side of the paper. Fold the bottom edge over the filling, fold the 2 sides over to secure the filling and roll to enclose. Repeat with the remaining rice paper rounds and ingredients.
Slice each roll in half and serve with the dressing.
