Green veggie rice paper rolls with moringa

- To make the dressing, combine all the ingredients in a food processor or blender and pulse for 1 minute.
- Adjust the seasoning then cover and refrigerate until needed.
- To make the rice paper rolls, pick the lettuce leaves and trim if necessary.
- Slice the cucumbers into matchsticks.
- Thinly slice the mangetout.
- Dip 1 rice paper roll in lukewarm water for 30 seconds or until clear and soft.
- Remove from the water and place on a clean damp tea towel.
- Arrange the lettuce leaves, cucumber and mangetout on one side of the paper. Fold the bottom edge over the filling, fold the 2 sides over to secure the filling and roll to enclose. Repeat with the remaining rice paper rounds and ingredients.
- Slice each roll in half and serve with the dressing.
