Combine the instant coffee, caster sugar and cold water.

Using an electric milk frother, whip the mixture until thick and creamy. Fill two tall glasses with ice cubes.

Add a shot of espresso into both glasses. Pour in the evaporated milk and finally top with the frothy coffee.

Serve immediately.
