Download PDFTo make the furikake mix, toast the sesame seeds in a frying pan and crumble the nori sheets. Mix the sesame seeds with the crumbled nori, salt, sugar, black sesame seeds, bonito flakes and chilli flakes.
To make the sticky sauce, combine the honey, fish sauce and oyster sauce in a bowl. Set aside.
Heat the oil to 180 C in a heavy-based saucepan or deep fryer.
Fry the French fries in batches until golden and crispy. Drain on paper towels.
Drizzle the sticky sauce all over the chips and toss to make sure they are all lightly coated.
Sprinkle generously with the furikake mix and serve while still warm.
