Download PDFWhisk the vinegar, soya sauce, sugar, pepper, bay leaves, ginger and half of the garlic in a glass or ceramic bowl.
Add the chicken and stir to coat. Cover with plastic wrap and place in the fridge for 30 minutes to marinate.
In a large pot or pan, sauté the sliced leeks in olive oil then add the marinated chicken along with water. Bring the chicken to a boil over high heat. Lower the heat, cover and simmer for 30 minutes, stirring occasionally.
Remove the lid and simmer until the sauce is reduced and thickened, and the chicken is tender in about 20 more minutes. Serve hot with steamed rice.
