Filipino chicken adobo

- Whisk the vinegar, soya sauce, sugar, pepper, bay leaves, ginger and half of the garlic in a glass or ceramic bowl.
- Add the chicken and stir to coat. Cover with plastic wrap and place in the fridge for 30 minutes to marinate.
- In a large pot or pan, sauté the sliced leeks in olive oil then add the marinated chicken along with water. Bring the chicken to a boil over high heat. Lower the heat, cover and simmer for 30 minutes, stirring occasionally.
- Remove the lid and simmer until the sauce is reduced and thickened, and the chicken is tender in about 20 more minutes. Serve hot with steamed rice.
