Download PDFPreheat a griddle pan or charcoal grill until it is very hot and smoking.
Pit the dates by making a cut down one side and removing the seeds. This will make a pocket.
Slice the feta into small rectangles and stuff them inside the dates. Wrap each stuffed date in a slice of bacon and secure with a toothpick or small skewer. You could also place multiple dates on a larger skewer. Brush the dates with the honey.
When the barbecue is at a medium heat, place the skewers on the grid and grill, turning often, until sticky and crisp.
Remove from the heat and serve immediately drizzled with the extra honey, sprinkle with pistachios and za’atar.
