Download PDFFill a large pot with water and bring to a boil. Once the water has boiled, season with salt and add the spaghetti. Cook for 10-12 minutes.
Once the pasta is cooked, strain and immediately place into a serving dish.
Toss the goat’s cheese through the hot spaghetti. Once the cheese has melted, toss through the lemon zest, chopped chives and shredded spinach.
Season with the salt and pepper and drizzle with the olive oil.
Serve immediately.
