Place the tomatoes, tomato vines, basil leaves and the onion in a large pot over a medium heat. Cover with a lid and shaking frequently, leave on the heat for about 45 minutes until the tomatoes have released their juices and softened.
Remove the pan from the heat, remove the vines and basil leaves and use a stick blender to blend the tomatoes until smooth.
Peel and crush the garlic.
Heat the oil in a pan and add the garlic.
After a couple of minutes, add the tomato sauce and the remaining basil and bring to a boil.
Simmer over a low heat for 30-45 minutes, or until reduced and thick.
Season with the sea salt flakes and freshly ground pepper.
The sauce can now be bottled or frozen.
