Classic whole tomato sauce

- Quarter the tomatoes and onion.
- Place the tomatoes, tomato vines, basil leaves and the onion in a large pot over a medium heat. Cover with a lid and shaking frequently, leave on the heat for about 45 minutes until the tomatoes have released their juices and softened.
- Remove the pan from the heat, remove the vines and basil leaves and use a stick blender to blend the tomatoes until smooth.
- Peel and crush the garlic.
- Heat the oil in a pan and add the garlic.
- After a couple of minutes, add the tomato sauce and the remaining basil and bring to a boil.
- Simmer over a low heat for 30-45 minutes, or until reduced and thick.
- Season with the sea salt flakes and freshly ground pepper.
- The sauce can now be bottled or frozen.
