Download PDFPreheat oven to 220°C, gas mark 6. Slice the brie and set aside.
Heat the oil in a 30cm round heavy-base ovenproof frying pan or baking dish over a high heat.
Add the bacon and fry, turning frequently, for 2 minutes or until crisp. Remove the pan from the heat and set aside some of the bacon.
Preheat the grill.
Place the eggs, cream, Parmesan, salt and pepper in a large bowl and whisk until well combined.
Pour the egg mixture into the pan, arrange the sliced brie on top.
Grill the frittata for 15 minutes or until just set.
Sprinkle with extra pepper, reserved bacon and thyme leaves.
