Download PDFPreheat the oven to 180°C, gas mark 4. Grease and line a 10cmx10cm baking dish with baking paper.
In a microwave-safe bowl, melt the butter. Set aside to cool slightly. Cut the avocado in half, remove the pit and scoop the flesh into a blender or food processor. Blitz until smooth and creamy.
In a mixing bowl, combine the melted butter, sugar, mashed avocado, eggs and vanilla extract. Stir until well combined.
In a separate bowl, whisk together the flour, cocoa powder and salt. Gradually add the dry ingredients to the avocado mixture, stirring until just combined.
Pour the brownie batter into the baking dish and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean. Be careful not to overbake. Remove from the oven and set aside to cool completely.
Once the brownies are cool, cut into squares. Top each square with a whole marshmallow that has been decorated with eyes and a mouth. Microwave for 30 seconds until it just starts to melt.
Serve immediately.
