Antonio the avocado’s ghost marshmallow brownies

- Preheat the oven to 180°C, gas mark 4. Grease and line a 10cmx10cm baking dish with baking paper.
- In a microwave-safe bowl, melt the butter. Set aside to cool slightly. Cut the avocado in half, remove the pit and scoop the flesh into a blender or food processor. Blitz until smooth and creamy.
- In a mixing bowl, combine the melted butter, sugar, mashed avocado, eggs and vanilla extract. Stir until well combined.
- In a separate bowl, whisk together the flour, cocoa powder and salt. Gradually add the dry ingredients to the avocado mixture, stirring until just combined.
- Pour the brownie batter into the baking dish and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean. Be careful not to overbake. Remove from the oven and set aside to cool completely.
- Once the brownies are cool, cut into squares. Top each square with a whole marshmallow that has been decorated with eyes and a mouth. Microwave for 30 seconds until it just starts to melt.
- Serve immediately.
