Download PDFPour the stock into a pot and place over a medium-low heat.
Using a damp towel, wipe down the kombu then add to the stock. Simmer for 2 hours. After 2 hours, bring to a boil then reduce the heat to the lowest setting and cover for 10 minutes. Remove from the heat and add bonito flakes. Set aside until ready to use.
Bring the broth to a boil. Add the rice and vegetables or protein chopped into bite-size pieces. Reduce the heat until the water evaporates, approx. 6-7 minutes.
Finish with a drizzle of soya sauce or tamari.
