Öcce (Turkish herb fritters)

  1. Finely slice 6 spring onions, garlic, mint and parsley. Then place them in a large bowl. Add the chilli flakes, cumin, salt, flour and crumbled feta.
  2. Mix well before stirring in the eggs. Season with salt and pepper and mix well.
  3. Heat 4 tablespoons of oil in a large frying pan over a medium-high heat. Drop tablespoonsful of the batter into the hot oil, leaving space between each one.
  4. Shallow fry for approx. 2 minutes on each side until golden brown. Remove with a slotted spoon and drain on paper towels.
  5. Finely slice the remaining spring onion. Arrange the öcce on a serving platter and top with sliced spring onion and microgreens. Place the labneh in a small bowl and drizzle over the olive oil.
  6. Serve the öcce with the labneh.
