Download PDFTo make the pudding, add the milk and rice to a deep saucepan. Bring to a boil, then simmer for 40 minutes, stirring continuously.
Slice down the length of each vanilla bean and scrape out the seeds. Chop the white chocolate.
Add the cardamom to the milk mixture. Stir in the white chocolate, sugar and vanilla seeds. Remove from the heat.
Cover the saucepan with a lid and allow to cool overnight in a cool place or in the fridge.
Place the whipping cream in a large bowl and whip until stiff peak stage. Fold into the mixture.
Serve the pudding with the blackberries.
