Waldorf salad

- To make the dressing, juice the lemon and add the juice to a small bowl along with the yoghurt, mayonnaise and honey. Season with salt and pepper and set aside.
- Dry toast the walnuts in a pan over a medium heat until golden brown. Allow the nuts to cool completely then roughly chop. Slice a few grapes into halves then finely slice the remaining grapes. Slice the Granny Smith apples. Slice the celery at a diagonal. Finely chop the parsley.
- Place the mixed salad leaves in a bowl and top with the apples, celery, grapes and walnuts. Pour the dressing over the salad and scatter over the parsley.
- Serve immediately.
