Vegan spiced mince and mint flatbreads

- Dice the onion and crush the garlic clove
- Heat a pan over a medium-heat and add the oil.
- Sauté the onion and garlic for a few minutes until translucent, then add the Meatless Farm Meat Free Mince and cook until browned.
- Add the spices, harissa and apricots and cook for another 2 minutes.
- To prepare the dressing, chop the mint and crush the garlic clove.
- Zest and juice the lemon.
- Add all the dressing ingredients to a bowl and mix well.
- Warm the flatbreads in the oven for a few minutes then remove.
- Add a generous dollop of dressing over each flatbread and spoon over the spiced mince.
- Garnish with the fresh mint, chopped toasted almonds and olive oil and serve immediately.
