Download PDFPreheat the oven to 190°C, gas mark 5. Line a baking tray with parchment paper.
Peel the potatoes and cut into 1¼cm-thick sticks. Place the sticks in a large bowl.
Add the olive oil, whole garlic, fresh herbs, salt, and any other seasonings you’d prefer, to the bowl. Toss everything together so that each stick is coated.
Place the sweet potato sticks on the baking tray, making sure they’re all placed in a single layer.
Bake for approx. 20 minutes, then flip over and bake for a further 10 minutes until the fries are crispy and done to your liking.
