Spicy egg pakoras

- Heat up a large cast iron pot or deep fat fryer to 180°C.
- Make the pakora batter by combining all the ingredients together in a large bowl.
- If you don’t have a thermometer, test that your oil is ready by dropping a tsp of the batter in. If it browns and rises immediately then it’s ready.
- Drop spoonfuls of the batter into the oil, making sure to not overcrowd the pot.
- Fry for about 3 minutes a side or until golden and cooked through. Once golden on once side, flip the pakoras using tongs or a slotted spoon.
- Drain on paper towels and serve hot.
