Smoked salmon and chopped egg finger sandwiches

- Bring a pot of water to the boil. Lower the eggs into the water and boil for 8 minutes. Then, plunge the eggs into ice water to cool before peeling off the shells.
- Chop the chives, then combine them with the mayonnaise and seasoning.
- Roughly chop the eggs and fold into the mayonnaise.
- Lay 4 slices of bread out on a clean work surface and spread half the egg-mayonnaise mix onto each slice. Top with the smoked salmon.
- Cover with the remaining slices and sandwich together. Using a serrated knife, trim off the crusts.
- Cut each sandwich into dainty bite-sized rectangles and serve.
