Salmon with green slaw and tamarind dressing

- Finely slice the fennel. Thinly slice the celery. Roughly tear the coriander and mixed herbs. Place these slaw ingredients in a serving dish.
- Finely grate the palm sugar into a bowl. Combine it with the fish sauce, lime juice, tamarind paste and tamari to create the dressing. Place aside.
- Thinly slice the salmon and arrange over the slaw.
- Drizzle the dressing over the salmon and slaw.
- Top with the sesame seeds and edible flowers to serve.
