Saffron cardamom pancakes

- For the pancakes, whisk all the ingredients together in a large bowl until completely smooth.
- Heat 1 tsp of the oil in a large, non-stick frying pan over a high heat. Add 125ml (½ cup) of the batter and swirl to coat the base of the pan.
- Cook for 2-3 minutes on one side or until the pancake is cooked through and the edges are lightly browned and crisp.
- Set aside and keep warm.
- Serve immediately, drizzled with maple syrup and dusted with icing sugar.
