Download PDFTo make the khabees, place a medium-sized non-stick pan over a medium-high heat. Add the semolina and toast, for approx. 5 minutes, or until golden brown. Stir constantly to ensure even browning.
In a small pan, combine the water, sugar, butter, oil, saffron, cardamom and ginger. Stir until the butter has melted and begins to brown, approx. 5 minutes.
Add the butter mixture to the semolina and cook over a medium heat for 5 minutes, or until the mixture is dry and crumbly.
Divide the yoghurt between four bowls or glasses and top with the khabees, passion fruit pulp, rose petals and roughly chopped pistachios.
