  1. Pit and chop the peaches.
  2. Place the peaches in a large, sterilised jar and pour the honey over the fruit along with the rose water and mash together.
  3. Add the vinegar and refrigerate for 1-2 days.
  4. When ready to serve, strain the liquid and dilute 1 part syrup to 4 parts sparkling water.
