Roasted tomato and zaatar manakish

- Preheat the oven to 200°C, gas mark 6. Place a pizza stone or baking sheet inside to preheat.
- Mix the dough ingredients together and knead for 8-10 minutes, or until smooth and elastic. Allow to rest for 10 minutes.
- Meanwhile, arrange the tomatoes on a baking tray, drizzle over 2 tablespoons of the olive oil, and season with salt and pepper. Roast for 10 minutes or until blistered but not yet soft. Set aside.
- Divide the dough into four equal portions and roll each out into a 25-30cm circle. Brush each dough round with the remaining olive oil and sprinkle over the za’atar. Place in the oven on the pizza stone for 10-15 minutes, or until golden and cooked through. Remove from the oven.
- Top the manakish with the labneh and roasted tomatoes and serve immediately.
