Download PDFPreheat the oven to 160°C, gas mark 3. Grease a 6-cup muffin tin with a little olive oil and set it aside.
Slice the top quarter off the onions, keeping the skin on and root intact. Place a bay leaf in the bottom of each muffin cup, followed by an onion, cut side up.
Melt the salted butter in a small pot along with the salt, pepper, and apple cider vinegar. Drizzle the melted butter over the tops of the onions. Cover the muffin tin with aluminium foil and roast in the oven for 40 minutes. Remove the foil and continue roasting for another 20-25 minutes, or until the onions are deeply golden and tender.
Allow them to rest for a few minutes before serving.
