Provence pissaladière

- In a large skillet over medium heat, brown the finely chopped onions and garlic in the oil, stirring frequently until cooked through.
- Add the coarsely chopped capers. Continue cooking for 2 minutes, stirring constantly. Add some salt and pepper and put to one side.
- Put the grill at the centre of the oven. Preheat the oven to 225°C. Sprinkle the flour onto a baking tray. Place the pizza dough on it and spread it well with your fingers until it covers the entire baking sheet. Lightly oil the dough.
- Divide the onion mixture over the dough and then the olives. Lastly, arrange the anchovy fillets on the top as desired. Bake for about 25 minutes or until the dough is golden brown and crisp. Remove from the oven, sprinkle with parsley.
