Prawn and cucumber finger sandwiches

  1. Zest and juice the lemon.
  2. Toss the prawns in the lemon juice and zest and season with the salt.
  3. Using a peeler, peel the cucumbers into ribbons and set aside.
  4. Mix the cream cheese in a small bowl to soften it slightly and generously spread the cream cheese over each slice of bread.
  5. Chop the dill and sprinkle over 3 of the slices and top with the prawns and cucumber ribbons.
  6. Top with another slice of bread and cut off the crusts. Repeat this process with each sandwich.
  7. Slice the sandwich into 3 fingers and place on a serving platter.
