Prawn and cucumber finger sandwiches

- Zest and juice the lemon.
- Toss the prawns in the lemon juice and zest and season with the salt.
- Using a peeler, peel the cucumbers into ribbons and set aside.
- Mix the cream cheese in a small bowl to soften it slightly and generously spread the cream cheese over each slice of bread.
- Chop the dill and sprinkle over 3 of the slices and top with the prawns and cucumber ribbons.
- Top with another slice of bread and cut off the crusts. Repeat this process with each sandwich.
- Slice the sandwich into 3 fingers and place on a serving platter.
