Pluot and thyme iced tea

- Pit and roughly chop 350g pluots.
- Place the sugar, water and pluots in a small saucepan and bring to a boil.
- Simmer for 3-5 minutes or until the pluots have softened.
- Add the tea bags, thyme and cinnamon and allow to steep.
- Strain the syrup once it reaches room temperature.
- Pour the syrup into a large jug and add the ice cubes to it.
- Pit and slice the remaining pluots (approx.12-13) and add them to the jug.
- Top with the sparkling water.
