Download PDFPreheat the oven to 180°C, gas mark 4. Line a roasting tray with baking paper.
Slice the potatoes into roughly ½cm slices, leaving the bottom intact. You can do this by placing chopsticks or wooden spoon handles on either side of the potato and slicing until you hit the chopsticks or handle.
Mince the garlic. Pick and finely chop the coriander leaves. Finely chop the jalapeño.
Place the potatoes on the prepared roasting dish. Brush with the ghee and sprinkle over the spice mix and salt. Place in the oven for 45 minutes or until crisp and fork tender.
Scatter over roughly chopped coriander and serve immediately.
